Scrumptious Chicken Meatloaf

ingredients
- 1 1⁄2 lbs ground chicken
- 3⁄4 cup breadcrumbs (I used fine Italian)
- 1 egg white (I used Ener-G egg substitute)
- 2 small carrots (chopped)
- 6 green onions (chopped)
- 1 teaspoon fresh sage
- 1⁄4 cup ketchup
- 1 large garlic clove (minced)
- 1 1⁄2 teaspoons Worcestershire sauce
- 1⁄2 teaspoon celery seed
- 1⁄4 teaspoon sea salt
- 1⁄8 teaspoon pepper
directions
- Preheat oven to 350'F.
- Combine the chicken and bread crumbs in a large bowl and set aside.
- Cut up the carrots and green onions and add to the blender.
- Add the rest of the ingredients from the sage to the pepper. Blend until smooth.
- Add this to the chicken breadcrumb mixture.
- Combine with your hands.
- Place in a buttered non stick 9x5x3" loaf pan.
- Cover with tin foil and bake for 1 hour.
- Then remove the foil and cook for an additional 30 minutes or until the loaf is cooked through.

My hubby is a Professional Jazz and Classical Musician. He plays with the Albuquerque Philharmonic Orchestra which is wonderful because I get to see all his concerts and they are free!
We are trying our best to live a Green and Sustainable lifestyle which is no easy feat in a desert.
I love any cookbook that promotes good health and tasty meals. I enjoy pasta dishes and sweet vegan deserts. I have found that I am very successful in converting conventional recipes to vegan. This has allowed me to enjoy all types of foods that I other wise could not.
Some day we would like to relocate to upstate New York and be closer to my family in Canada and my husbands in New York. My DH retires in 9 years, so nothing will stop us from heading home then :-)
