Scrumptious Chicken Meatloaf

"Yum! This meatloaf is really delicious. I combined 1/4 cup ketchup and 1/4 cup prepared mustard and spread it on the top of the meatloaf. This is optional."

  • Preheat oven to 350'F.
  • Combine the chicken and bread crumbs in a large bowl and set aside.
  • Cut up the carrots and green onions and add to the blender.
  • Add the rest of the ingredients from the sage to the pepper. Blend until smooth.
  • Add this to the chicken breadcrumb mixture.
  • Combine with your hands.
  • Place in a buttered non stick 9x5x3" loaf pan.
  • Cover with tin foil and bake for 1 hour.
  • Then remove the foil and cook for an additional 30 minutes or until the loaf is cooked through.

I enjoy pasta dishes and sweet vegan deserts. I have found that I am very successful in converting conventional recipes to vegan. This has allowed me to enjoy all types of foods that I other wise could not. Some day we would like to relocate to upstate New York and be closer to my family in Canada and my husbands in New York. My DH retires in 9 years, so nothing will stop us from heading home then :-)
