  • In a large Dutch oven, cook onions in the 1/3 cup butter over medium heat, till onions turn a dark golden brown, about 15-20 minutes.
  • Add garlic, mustard and sage.
  • Stir in sherry.
  • Add broth.
  • In a medium saucepan, melt 1/3 cup butter; stir in flour.
  • Cook and stir the mixture till light brown.
  • Stir flour mixture into onion mixture.
  • Stir in cream.
  • Bring to boiling.
  • Cook for 1 minute more.
  • Season with salt and pepper.
  • Serve soup topped with croutons, Swiss cheese and Parmesan cheese.

  1. I spent a short time as a cook at Schuler's (Grand Haven). This is how we served it... in a small soup crock, put a large freshly baked crouton (w/ sprinkles of parm.), add about an ounce of ale, fill it with soup, drape a slice of swiss over the top, sprinkle it with more parm., in the oven a few min. to melt the swiss... presto, a truly great soup. Rich and ever so good.
     
  2. A very rich warming soup! I was unsure about adding the flour butter mix but it thickened it up nicely.I used chicken broth instead of beef broth and added 1T of balsamic vinegar. Very easy to make. Thanks for a good one. Catherine
