Sausage, Spinach, Cheese & Potato Low Carb Breakfast Squares

"These freeze well, reheat well. Mr. Wonderful takes them to work for an easy, low carb breakfast. And this recipe is pretty flexible, easily adaptable. If you don't want to use bulk sausage, cut up some pre-cooked link sausages or microwave some uncooked link sausages. Yes, potatoes have carbs, duh, but one potato for 12 servings is very satisfying without doing a lot of damage. Use whichever cheese you prefer: cheddar, jack, colby, whatever."
