Salmon With Caramelized Onion and Strawberry Relish

  • In a sauté pan melt the butter and oil and cook onion on low, stirring occasionally until caramelized. This can take a very long time (45mins or so).
  • While you are doing this, reduce vinegar in a small saucepan to ¼ cup or less. It should be syrupy and able to coat the back of a spoon.
  • Cut the salmon into 4 equal portions. And score the skin side with a sharp knife.
  • Remove onions from pan and turn heat up to medium high. Add more oil if necessary. No need to wash the pan.
  • Add salmon skin side up and sear for 2-4mins. Flip the salmon and cook skin side down for 3-5mins depending on how thick your filets are.
  • Stir onions, strawberries and balsamic together and serve over the salmon.
