Salmon Souffle

"This is an old stand-by in our house. It is so simple to make and everyone loves it. The glorious end result makes you look like a cooking star. I found the recipe years ago in my SIL's Harrowsmith cookbook."

  • Melt butter in small sauce pan.
  • Add flour, milk, salt and pepper.
  • Boil until thick and then remove from heat.
  • Add salmon and slighty beaten egg yolks.
  • Beat egg whites until stiff and fold inches.
  • Pour into greased souffle dish or other deep baking dish.
  • Bake at 350 for 20-25 minutes or until golden brown.

  1. Was neither very light nor did it rise much Yes 11ozs of flaked baked salmon and very fresh eggs but possibly allowed the flour (really 3 tbsp?) butter and milk to boil and thicken a tad too much Thoughts

  1. Our family loves this recipe! Perhaps 2-3 months ago, I tried it for the first time, and this was my first attempt at making souffle. I used canned salmon. Today, I had leftover fresh salmon to use up, so I put it in a baggie & weighed it (8oz), crumbled it, then pulsed in food processor, and when it was time to assemble the souffle, used an extra egg, to balance out the extra 2 ounces of salmon. Very good and easy to make!

  3. Use this recipe whenever I make one. I do however cut back on the flour by 1&1/2 teaspoon for single recipe. When I bubble the recipe I cut it back by 1 tablespoon. Remember do Not open oven while cooking until your end time or the soufflé will collapse
     
  4. I used to make this a lot the first few years I was married. It was my “fancy” dish. That was the early 90s. I used tuna instead of salmon back then because tuna was cheaper. I lost my recipe and found this recently. So glad I did. My husband and I love this.
     
  5. This is my first try. Hope it rises. It didn't rise. What did I do wrong?

Life is tough but we will do whatever it takes to give our daughter a fighting chance at a long, normal life.</p>
