Rocky Mountain Coleslaw

"This is a great meal by itself, but if you must, it's also an excellent side for bbq's or get togethers. We can't keep it around for more than a day when we make it...delicious!!! Also...I like the veggies cut up fairly large in this salad...it just seems to work better that way."

  • Mix all dressing ingredients together.
  • Add veggies, fruits, and peanuts.
  • Mix well.
  • Leave in fridge for at least an hour -- the longer it "sits" in there, the better -- flavor absorption time.
  • CHOW DOWN BABE!

  1. This was SO good! We added a few sliced of crumbled bacon to it, and YES--all by itself--it became a MEAL! Delish.... Made as directed (used golden raisins). Wouldn't change a thing. My hubby is from Montana, so this was a SPECIAL treat for him. *Made for Spring 2007 PAC*

I am a Colorado ski bum at heart, but am currently stuck in Miami, FL of all places working on my Doctoral degree in physical therapy at UM. I can't wait until I graduate and can get back to the mountains! 2 more years, 2 more years...I love to cook and find it a great way to relax and slow down after classes and I can't wait until I have more free time to be able to do it. I have been in the Air National Guard with Colorado and Florida for the last four years and have been fortunate enough to taste many different foods and stretch my palate.
