"A simple, zesty relish that makes a quick and delicious appetizer when served with toasted bread rounds or crackers (even tortilla chips!). It's also nice accompanying roast chicken or fish."

  1. I needed some sun dried tomatoes for a healthy Chicken Florentine I was making. I decided to do this instead of run to the store...again... for a missing ingredient. I left out the parm because the end recipe doesn't call for cheese. It was all I could do to keep my girls (and myself truth be told) off the pan until the rest was ready to add them. They are so good. No more $5 oily jars of sun dried tomatoes for me.
  2. The flavor was good on this, but I didn't like the way the parmesan clumped up. We had this with Italian sausages, it was OK.
  3. Roasting brings out the fabulous tomato flavor. I think I'd love this one even without the cheese!
  4. Fabulous with home grown tomatoes.
  5. Easy and delicious! I already had the tomatoes seeded and chopped before I realized that I was out of Parm cheese, so I trudged ahead, cheeseless, with the rest of the ingredients and the end product is excellent! The crushed red pepper really punches up the sweet tomatoes!

<style>body { background: url(""); background-repeat: repeat-y; }</style> OK, here goes. I live in Athens, Greece. I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
