  • Preheat oven to 375*.
  • Place potatoes in a large bowl.
  • Whisk together honey, oil, salt, cinnamon and pepper; add to potatoes and toss to coat.
  • Transfer to a greased 15 x 10 x 1 inch baking pan. (I like to use aluminum foil for easy clean up.).
  • Roast until tender, 40-50 minutes, stirring once or twice to prevent burning.

I am now semi-retired and an Empty Nester. I try to focus on lighter dishes for day to day menus. I still like to explore new food ideas. I look for smaller quantity dishes now.
