- 3 cups fresh Brussels sprouts, washed and trimmed
- 1 head garlic, skin removed from each clove and quartered
- 1 teaspoon dried thyme leaves
- 1 1⁄2 tablespoons extra virgin coconut oil, melted
- 1⁄4 teaspoon sea salt
- fresh ground black pepper
directions
- Preheat oven to 400F.
- Cut off brown ends of sprouts and remove yellow outer leaves.
- In large bowl, mix sprouts will all remaining ingredients. Toss well.
- Spread sprouts across to a shallow baking pan.
- Roast until tender with brown edges, about twenty minutes, shaking pan every five.
- Sprinkle with salt.
- Serve immediately.
