DIRECTIONS

  • Preheat oven to 400° F.
  • Line a baking sheet with aluminum foil. Grease the foil and place beets on top for roasting.
  • Bake beets 50 minutes or until the flesh is softened.
  • Allow to cool.
  • Peel (if desired) and slice beets.
  • Whisk olive oil, balsamic vinegar and red wine vinegar.
  • Add parsley, salt, and pepper and mix.
  • Pour the vinaigrette over the sliced beets.
  • Sprinkle crumbled feta on top.
