- 6 small beets
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon red wine vinegar
- 2 tablespoons fresh parsley, minced
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
- 1⁄3 cup feta cheese, crumbled
directions
- Preheat oven to 400° F.
- Line a baking sheet with aluminum foil. Grease the foil and place beets on top for roasting.
- Bake beets 50 minutes or until the flesh is softened.
- Allow to cool.
- Peel (if desired) and slice beets.
- Whisk olive oil, balsamic vinegar and red wine vinegar.
- Add parsley, salt, and pepper and mix.
- Pour the vinaigrette over the sliced beets.
- Sprinkle crumbled feta on top.
