Red Onion Jam

- 1 kg red onion, sliced
- 1 tablespoon oil
- 200 g sugar
- 250 ml red wine
- 150 ml red wine vinegar (I used half and half) or 150 ml balsamic vinegar (I used half and half)
- 1 teaspoon salt
- 1 teaspoon fresh ground pepper
directions
- Heat oil, add onions, salt and pepper and sugar. Cook gently for 1/2 hour until liquid is almost gone (quite a lot of liquid comes out at the beginning).
- Add wine and vinegar, simmer for 1/2 hour or until liquid is almost gone.
- Put into sterilised jars while still hot.
