- 3 tablespoons extra virgin olive oil
- salt and pepper
- 1 teaspoon red wine vinegar
- 2 teaspoons Dijon mustard
- 1 teaspoon capers, chopped
- 2 tablespoons flat leaf parsley, chopped
- 1 tablespoon tarragon, chopped
- 1 shallot, finely chopped
directions
- Whisk the red wine vinegar with the mustard, season, and pour in the rest of the oil while whisking.
- Stir in the capers, herbs and shallot.

Not bad for a very fast and easy to make Sauce Ravigote. I think I still prefer the version made with egg yolks, but this is much faster and easier. I added extra capers and served with tete de veau and boiled potatoes. Double this one, will also make a nice sald dressing, or good tossed with cold shrimp or crab.****** This has become my go to sauce for lots of purposes. Changing rating to 5 starts. More than double it, it keeps well in a jar in the fridge. I don't use the tarragon, and I whizz it all up in a tny food processor.
