DIRECTIONS

  • Preheat oven to 350 degrees.
  • Roast Yellow pepper and peel the blistered skin.
  • Saute the onions in olive oil until translucent.
  • Put the pepper, onion, and garlic in the blender with the broth.
  • Salt and Pepper to taste.
  • Blend until smooth.
  • Put the quinoa into a casserole dish, pour the pepper sauce over it; mix well.
  • Tightly cover with lid or foil.
  • Bake for 45 minutes.
