Quick Blintz Loaf

"This is a requested Recipe from a local PBS TV Station. It is so easy and quick to make, yet so delectible! I know it will become one of your favorite's too!"

1 Loaf




  • Preheat oven to 350°.
  • Butter Glass Loaf Pan.
  • Melt Butter and put into large bowl.
  • Add the Cottage Cheese.
  • Mix until Creamy Smooth.
  • Slowly add the Bisquick.
  • Add the Sugar.
  • Add the three Eggs, one at a time, mixing well after each.
  • Pour mixture into loaf pan.
  • Bake 350° uncovered, for 40 minutes.
  • Set aside to cool for 5 to 8 minutes.
  • Slice about 8 even slices.
  • Serve with Jam, Preserves or Sour Cream on the side.

  2. Oh, wow - super yummy and EEEEEEEEzeee! A previous review mentions that "best of all" this recipe isn't fried. Perhaps she's assuming there are health benefits because of that, but honestly... once you've dumped in half a cup of butter, it's probably got more fat in it than anything fried would. And you can taste every drop - mmm... a delightful dish for Yom Tov, but probably deadly on a regular basis. :-)

  4. This was great but I had to use Philadelphia cream cheese as I had no cottage cheese so I want to do it again using the correct ingredient . It tasted like a cheesecake with the texture of a madeira type cake. I served it with fruit and cream for dessert and I have since noticed that most of it has gone. I am looking forward to making this again and eating it again - thanks to BB502.
  5. wow this was so good, i was having the jones for blintzes and had all of the ingredients. i served this with warm cherry pie filling, the lite kind from a can and it was really good. DH does not care for blintzes, but he scarfed this down!!!!!


I am in Northeastern Ohio. Have lived here my entire life. I am retired. I was raised at my Grandmother's side, with an apron and wooden spoon, as my small chef's wardrobe! We spent many happy times, in her kitchen baking and cooking up memories! My love of the culinary arts has never waned. It seems I still cook and bake, as if I were feeding everyone at Grandma's Boarding House! (although my neighbors are happy about the "goodies" I am constantly sending their way!) I must learn to cook for two... My kitchen is in my Cape Cod Style home and done in a French Country style, with french blue and pale yellow, accented with white.
