ingredients
- 1 medium onion, chopped
- 29.58 ml vegetable oil
- 2 (850.48 g) can black-eyed peas, rinsed & drained
- 59.14 ml cooked ham, diced
- 59.14 ml teriyaki sauce
- 4.92 ml creole seasoning
- 295.73 ml water
- hot cooked rice

Toppings
- chopped tomato
- green onion
directions
- Saute chopped onion in hot oil over medium high heat 3 minutes.
- Add peas & next 4 ingred.
- Bring to boil; reduce heat and simmer 15minutes.
- Stir occasionally.
- Serve over rice w/ desired toppings.

This was excellent. I had to make a couple substitutions: instead of 2 cans of black eyed peas, I used 1 can and supplemented with frozen corn. I also did not have teriyaki sauce, so I used Tempura Sauce (by Kikkoman) and I reduced the amount of water to 1 cup. Served over hot rice as suggested. I used about 1 cup of diced cooked ham. Such a great mix of flavors in this dish - very pleasing and something we'd love to have again sometime! And goes together very easily. Thanks.
