- 2 cups sugar
- 2 eggs
- 1 cup vegetable oil
- 2 cups mashed cooked pumpkin
- 1 teaspoon vanilla
- 3 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 1 teaspoon clove
- 1 teaspoon salt
- 1 (3 1/2 ounce) package French vanilla instant pudding
- 1 cup sugar
- 1 cup milk
- 1 cup shortening
- 1 teaspoon vanilla
directions
- Combine 2 cups sugar and eggs in mixer bowl; beat until thick and lemon colored.
- Add oil, pumpkin, and 1 teaspoon of vanilla; mix well.
- Add flour, baking soda, baking powder, cinnamon, ginger, cloves, and salt; mix well.
- Drop by teaspoonfuls on lightly greased cookie sheet.
- Bake at 350F for 12 to 15 minutes or until light brown.
- Remove to wire rack and cool.
- Combine pudding mix, 1 cup of sugar, milk, shorting, and 1 teaspoon of vanilla in mixer bowl.
- Beat until spreading consistency.
- Spread on half the cookies and top with remaining cookies.
