  1. Very nice recipe, easy to follow directions. I did make two change. I didn't have pumpkin spice so in it's place I put in about 1/4 tsp cinnamon and 1/4 tsp nutmeg. I also cooked it for the last 10 minutes at 350 as mine did not firm up as quick as indicated. It is very tasty toasted with a little butter too :)
  2. They were delicious!

  3. I wasn't sure what the pumpkin-banana combination would be like, but these were great! I cut the sugar waaay down (to about 1/4 cup), added a little honey (~2 Tbsp), used half whole wheat flour, and added lots more pumpkin pie spice (per other recommendations).
  4. Very good recipe - I added chocolate chips and pecans! Very moist
  5. This recipe is amazing! I used 1cup pure organic coconut sugar and a little organic maple sugar (2-3tsp) and I added almond extract. Other than that I left everything the same. I baked 1 hr exactly. PERFECTION!!!!! Thank you!

  1. I added an extra 1/2 banana and an extra 1/2 cup pumpkin, toasted pumpkin seeds and 1/2 teaspoon more of the pumpkin spice.

I am married to a beautiful wife and we have two beautiful children (ages 3 and 5). I love to cook whenever I have the chance. Problem is, so does my wife, so we wrestle over the chance often! We both work (social services with teenagers) so slow cooker recipes are common. In the summer I love to grill as often as possible. I do not usually do side dishes or desserts, my abilities with desserts especially are limited. My wife on the other hand is great with them. I love gardening, planting every spring. I focus on a variety of the easier veggies (tomatoes, okra, squash, etc.) and heavily on hot peppers (habeneros, serrano, etc.). It is "therapy" for me, working in the garden. I love the outdoors.<img src="http://i80.photobucket.com/albums/j166/ZaarNicksMom/PACsticker-Adopted.jpg">
