Cake
- 1 1⁄4 cups oil
- 3 eggs, beaten
- 1 3⁄4 cups granulated sugar
- 1 teaspoon vanilla extract
- 2 1⁄4 cups flour
- 1 1⁄2 teaspoons cinnamon
- 1 teaspoon baking soda
- 8 ounces crushed pineapple, with juice
- 1 1⁄2 cups bananas, chopped
- 1 cup apple, peeled & chopped
- 3⁄4 cup coconut
- 3⁄4 cup walnuts, chopped

Frosting
- 8 ounces cream cheese
- 1⁄4 cup oil
- 1 teaspoon vanilla extract
- 3 cups powdered sugar

Cake:
- Grease and flour the bottom of a 9 x 13-inch pan.
- Mix together the oil, eggs, sugar and vanilla extract.
- Sift the dry ingredients; add to mixture. Add remaining ingredients.
- Bake at 350' for 45 - 50 minutes (or until an inserted toothpick comes out clean).

Frosting:
- Beat oil and vanilla extract into cream cheese.
- Add powdered sugar.
- Beat until light and fluffy.

Aside from the Supermarket, there are tons of smaller Ethnic Grocery Stores, Butcher shops and Bakeries here in the city.
Vancouver is also home to the Granville Island Public Market - a food lovers haven! Imagine over 100 fresh produce, local seafood, speciatly meat and gourmet shops all in the same building... no wonder I love cooking so much!
