- 3⁄4 cup butter
- 1 cup sugar
- 1 egg
- 2 cups all-purpose flour
- 1⁄4 teaspoon baking powder
- 1⁄2 teaspoon vanilla extract
- 1 (12 ounce) jar preserves, seedless works best
- 1 1⁄3 cups shredded coconut (optional)
- 1⁄2 cup chopped walnuts (optional)
directions
- In a large bowl, cream butter and sugar. Add egg - mix well.
- In seperate bowl, combine flour and baking powder. Gradually add to butter mixture.
- Add coconut, walnuts and vanilla extract, mix thoroughly.
- Press two-thirds of dough into greased 13in x 9in x2in baking pan.
- Spread with preserves; crumble remaining dough over preserves.
- Bake 350 for 30 - 35 minutees or until golden brown.
- Cool in pan.
- Yield 36 bars.
