Power Oatmeal With Blueberries and Flax

- 1⁄4 cup old fashioned oats
- 1 tablespoon flax seed meal
- 1⁄4 teaspoon cinnamon, plus more for sprinkling
- 3⁄4 - 1 cup water (use 3/4c for thick and 1c plus for thin oatmeal)
- 1⁄2 scoop vanilla protein powder (see note above)
- 1⁄2 cup fresh blueberries
directions
- Combine oats, flax and cinnamon. Add water and mix well. Don't add the protein powder or it will become overcooked-yick!
- Microwave for one minute. **Microwave times given are for a 1300wt microwave, you will probably need more time if you have a smaller wattage microwave.**.
- Remove bowl from microwave and stir in protein powder.
- Return to microwave and set timer for 2 minutes, stirring every 20-30 seconds until your desired consistency is reached. *Watch carefully because the protein powder will puff and you don't want a mess!
- Add blueberries and stir - I like warm blueberries so I return the bowl to the microwave for another 15-20 seconds.
- Sprinkle with a little cinnamon.

Very quick for a power packed nutritious breakfast. I made on the stovetop, as written, except for adding some honey. My protein powder is plain, so like other reviewers added a touch of vanilla. Considering this is made with water, it's quite creamy....although next time I'd probably do half soy milk, half water. Like the blueberry cinnamon combo!

I made mine on the stove top, using steal cut oats. I heard that you were to add flax seed at the end of cooking to retain its nutrition. So I added my own ground flax seed, when it was done cooking. My son has protein powder so I sneaked some of his to use for the recipe. I also used a little Splenda and 1/4 teaspoon of vanilla extract. Made for *ZWT 6* I'm on Team *Ya Ya Cookerhood*

<br>I have been a member of Zaar for awhile now and found that I love it! I have tried so many recipes and many new foods that I never would have without Zaar.

<br>I work full-time at a university in Wisconsin, it allows me to travel a bit and see the rest of the state, I work with a lot a great people and am really happy in my job.
<br>
<br>When I'm not working, I spend time with my hubby and 12 year old son. My son has picked up my love for cooking, a few of the things he makes are - naan bread, cookies, and quick breads, I'm so proud of him! In our family we also have two cocker spaniels, our puppy Laci (above) and Peanut, that we adore like they were our children.

<br>We live in an old farm house that we are remodeling (did the library and the kitchen so far....) on the outskirts of town. Close enough where my hubby can bike to work in the summer, but far enough away from campus that we don't have to lock down our lawn ornaments in fear of college pranks!
