ingredients
- 4 large peeled potatoes, water to cover
- 1⁄4 teaspoon salt
- 1 1⁄2 cups large curd cottage cheese
- 1⁄2 cup sour cream
- 2 garlic cloves, minced
- 1 cup shredded sharp cheddar cheese or 1 cup swiss cheese
- 4 tablespoons chopped fresh parsley
- 2 green onions, minced
directions
- Cook potatoes in water with salt till done.
- Cut potatoes into ½ inch dices.
- Toss potatoes with cottage cheese, sour cream, garlic, salt, and green onions.
- Turn into a buttered 1 ½ quart casserole.
- Sprinkle with the cheese, bake @ 350 for 35 minutes or until potatoes are heated through and cheese is melted.
- Sprinkle with reaming parsley, serve.

Thank you for a good recipe. I had left over potatoes (cooked too much for potato salad for Easter) so I used them and it turned out great. Next time I will blend the cottage cheese and sour cream mixture before adding to the potatoes for a creamier sauce. My preference. Thank you! Made for Spring PAC 09.
