Potato Soup on a Whim

"One night, I decided I really wanted potato soup. I didn't have the complete ingredient list for any one recipe, so I threw one together out of what I had in my refrigerator and pantry. It's easy, takes only one pot, and you probably have everything in the house! Experiment with more or less of any ingredients ... or add your own."
