Portuguese Stewed Beef

- 2 lbs stewing beef or 2 lbs veal
- 1 tomatoes, peeled and diced (optional)
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 4 teaspoons paprika
- 1 1⁄2 teaspoons salt (or to taste)
- 1⁄2 teaspoon black pepper (or to taste)
- 1 teaspoon garlic powder
- 1⁄2 teaspoon ground cumin
- 1 tablespoon tomato paste
- 3⁄4 cup wine
- 1 teaspoon hot sauce
- 1 cup water
- olive oil
- 10 potatoes, peeled and quartered
- 2 carrots, peeled and cut into chunks
directions
- In a large pot heat the oil on medium heat then saute the onions for a few minutes. Add the garlic and sauté until fragrant.
- To the pot, add the stewing beef cubes and saute until the meat has seared on all sides. Add all of the spices, tomato (if using), and wine. Cook slowly over medium heat for 5 minutes.
- To the pot, add the carrots and cook for 5 minutes, then add the potatoes and enough water to almost cover the meat.
- Cook until potatoes and carrots are cooked, adding more water as needed. Taste and adjust the seasonings if needed.
