Pop's Texas Fried Egg Sandwich

- In a skillet melt the butter over medium heat.
- Crack the egg(s) and add to the pan and cook to desired doneness. I usually break the yolk and flip it over so it isn't too runny.
- Toast the bread and put mayonnaise or Miracle Whip on the bread.
- Add salt and pepper to taste on the egg and the tomato slices.
- Add egg onto toast.
- Add cheese slice onto egg while the egg is still hot.
- After you remove the egg from the pan, put the meat into the pan to heat it up / pan fry it to your liking. I keep mine in the skillet until it's just a smidge brown. I do fry it on both sides.
- After the meat is done, put it on top of the cheese.
- Add slice of onion.
- Add slice of tomato.
- Put the other piece of bread on top.
- Serve warm.
- Grab a napkin, because these are MESSY!

Not bad, but I like mine better. I saute' the onion with the egg (just poke the yolk so it spreads a little bit). When the egg is barely done, throw thin sliced ham on top, flip and cook till ham is browned. flip bac over for a few seconds (I love crispy edges on my eggs). Take bread put a slice of cheese and tomato on one slice. Place egg (ham side up) on one slice, top with another slice of cheese and bread. Place whole sandwich back in the pan, flip after 3 minutes, and cook till both sides are toasted and cheese is melted.

Made this for mom and brother. Posted a photo here of the sandwich without the onion or tomato, though I made suggested version and modified because my brother is a picky eater. Turns out he doesn't like mayo either so he didn't try it. My mother loved the original though. I thought it was great. Very easy. I used American cheese and an English toasting loaf.
