Cake
- 1 box yellow butter recipe cake mix
- 1 (11 ounce) can mandarin oranges (undrained)
- 1 cup shredded coconut (you'll need just a little extra to sprinkle on top of cake too)
- 1⁄2 cup vegetable oil
- 4 eggs

Frosting
- 1 (12 ounce) container Cool Whip
- 1 (15 ounce) can crushed pineapple (undrained)
- 1 (3 1/2 ounce) box instant vanilla pudding
directions
- For cake, preheat oven to 350° F.
- Mix all ingredients well.
- Pour batter equally into 3 greased and floured round cake pans.
- Bake for 25 minutes.
- Cool and Frost.
- For Frosting: Mix dry pudding mix and pineapple, then add cool whip.
- Frost cooled cake, and sprinkle with coconut and refrigerate until serving.
- Warning, since the frosting has cool whip in it, exposure to heat will make it runny.

ok picture this. Last nite we had friends over to grill 2 inch thick t-bones with potatoes and grilled jalapeno poppers! We were all on on covered deck and the tem was about 102 degrees. We had all just come in from the pool and were finishing a great dinner when someone asked what was for desert. I smiled and went to the fridge and pulled out this cake that I made the nite before. I served this around to the group the first ones that had been served where finishing their plate going for another piece!!Everyone commented on how refreshing it was. The whole cake was gone in 30 minutes!!! Followed thr recipe and wouldn't change a thing. I would give 10 stars if I could!!!!!!!

I made this for a Christmas party, and it was a big hit. It's light and just right for a dessert following a big meal. Thanks so much for posting it. I used my stand mixer and went ahead and added the mandarin oranges before mixing. Of course, it mixed them into the batter, and it was excellent that way. I also used a 9x13 pan, and added an extra 15 minutes of time.

Absolutely Delicious!! I followed the directions exactly, with a little less coconut. Also, I didn't have any round cake pans, so I used my 9x13 pyrex dish and baked for 10 minutes more than stated. Still wonderful and yummy!! It actually does taste like Pina Colada! My husband REALLY loves this cake and I plan to make it often. Thank you so much for sharing this lovely recipe!

I?m ?originally from Texas, but now live in Florida. Still gotta have that spice though....love chipotle peppers, habaneros, and jalapenos. This is a picture of myself & my 2 daughters taken in Dec'06. I am working on my graduate degree, & still work as a nurse prn. When I'm not cooking and eating what I cook... I head for the gym to work out. As far as cookbooks, I love the church/ community cookbooks, where someone has dug out old handwritten recipes by granny and shared them with others-those are the best kind. If I had a month off, I'd for sure go hiking, would love to visit Australia and New Zealand.?
