  • 1 (16 ounce) bottle teriyaki marinade
  • 12 chicken, cut in pieces
  • 1 12 cups rice, uncooked Uncle Ben's preferred
  • 3 cups water
  • 2 eggs, well beaten
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil, Asian style
  • 12 teaspoon oil, Asian style hot chile
  • 14 cup soy sauce, Kikkoman low sodium preferred
  • 1 tablespoon vegetable oil
  • 2 teaspoons garlic, finely minced
  • 12 onion, finely diced
  • 12 green pepper, finely diced
  • 1 bunch green onion, thinly sliced, tops included

  • Marinate chicken for at least 3 hours. Remove from marinade and place on rack on baking pan. Bake at 350 until cooked through and dark meat juices run clear (about 165 degrees on a meat thermometer, per US FDA guideline). Do not overcook meat. Using a meat thermometer is the only way to ensure proper degree of doneness. Cool chicken until it can be handled, then cut into small cubes or shred. Set aside.
  • Combine rice and water in medium saucepan. Cook 18 to 20 minutes or until tender and water is absorbed. Set aside.
  • Heat a small non-stick skillet over medium heat. Add 1 TBS oil and heat until oil smokes slightly and ripples. Add beaten egg. Cook until set. Using a thin, flexible spatula, carefully flip the omelet. Cook briefly on the other side. Remove from pan, cool and cut into matchsticks. Set aside.
  • Combine soy sauce, hot Asian oil and sesame oil. Set aside.
  • Heat second TBS oil in wok or large skillet over medium heat. If using a wok, turn to coat sides with oil. Add garlic and saute for about 15 to 30 seconds. Add regular onion and saute about 3 minutes. Add green pepper and saute for about 3 minutes. Add rice, toss to mix with thoroughly vegetables. Saute about 1 to 2 minutes. Add green onion and saute about 1 minute. Add soy sauce mixture. Saute for about 1 to 2 minutes or until soy sauce is mostly absorbed. Turn off heat. Add egg matchsticks and cooked chicken. Toss gently to blend. Serve immediately.
