Pecan Caramel Cream Squares

- 16 caramels, unwrapped
- 24 large marshmallows
- 1⁄2 cup milk
- 1 cup pecans, chopped, toasted
- 1 cup whipping cream
- 1 cup graham cracker crumbs
- 4 tablespoons butter, melted
directions
- Put caramels, marshmallows, and milk in top of double boiler.
- Place over boiling water.
- cook, stirring occasionally, until mixture is melted and smooth -- about 25 minutes.
- remove from heat and cool.
- stir in pecans.
- Whip cream and fold into creamed mixture.
- combine crumbs and butter.
- reserve 1/4 cup.
- press remainder into bottom of 10x6" dish.
- top with caramel mixture.
- sprinkle with crumbs.
- Chill several hours or overnight.
- cut into squares.

I love cooking, and reading Christian fiction..I have 5 grandchildren..4 boys and 1 spoiled granddaughter...I also have a black cocker spaniel named Tobey..who is very spoiled..Love computer games, cross stitch and reading cookbooks..I was diagnosed with Acute Myeloid Leukemia almost a year ago, on September 26, 2005....was in an out of the hospital for 8 months, doing intensive chemo...I am doing well now, thanks for all the prayers...
