  • 4 cups day-old bread cubes
  • 3 eggs
  • 1 12 cups milk
  • 13 cup sugar
  • 12 teaspoon almond extract
  • 1 (21 ounce) can comstock peach pie filling, divided

directions

  • heat oven to 350 degrees.
  • spread bread cubes in greased 9 inch square baking pan.
  • whisk together eggs, milk, sugar and extract.
  • stir in 1 cup peach filling.
  • pour over bread cubes, pressing custard down into bread with back of spoon.
  • bake 30-40 minutes until knife inserted near center comes out clean.
  • heat remaining peach filling and spoon over warm pudding.

  1. Very easy, and tasty. I used six thick slices of a day-old honey/oat/whole grain bread. I baked in a small round casserole, for about 40 minutes. The remaining peach filling was zapped 2 minutes in microwave. All enjoyed it very much. I can imagine this would be good with other fruit pie fillings as well.
