"This very easy recipe for fresh peach cobbler is a family favorite in the summer. The better the peaches, the better the cobbler! To make this gluten-free, use a GF flour or pancake mix in the topping."

  • Peel, slice, and measure peaches; set aside.
  • Blend sugar, cornstarch and cinnamon in a large saucepan. Add water and bring to a boil, stirring constantly. Remove from heat, add butter and sliced peaches. Pour into an 8” X 8” baking dish.
  • Sift dry ingredients together. Stir in oil and milk quickly with a few strokes. Spoon batter on top of hot fruit in baking dish; batter should not touch the edge of the pan.
  • Bake at 400 degrees F for 25 to 30 minutes, until topping is dark golden brown and fruit filling is bubbling.
