Filling
- 1 cup sugar
- 2 tablespoons cornstarch
- 1⁄2 teaspoon cinnamon
- 1 cup water
- 2 tablespoons butter
- 5 cups sliced fresh peaches, about 6 large

Topping
- 1 cup all-purpose flour
- 3 tablespoons sugar
- 1 1⁄2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 3 tablespoons vegetable oil
- 1⁄2 cup milk
directions
- Peel, slice, and measure peaches; set aside.
- Blend sugar, cornstarch and cinnamon in a large saucepan. Add water and bring to a boil, stirring constantly. Remove from heat, add butter and sliced peaches. Pour into an 8” X 8” baking dish.
- Sift dry ingredients together. Stir in oil and milk quickly with a few strokes. Spoon batter on top of hot fruit in baking dish; batter should not touch the edge of the pan.
- Bake at 400 degrees F for 25 to 30 minutes, until topping is dark golden brown and fruit filling is bubbling.
