Orange and Apricot Mousse

- 2 oranges
- 3 (14 ounce) apricots in juice (drained)
- artificial sweetener (to taste) (optional)
- 2 tablespoons gelatin (powdered)
- 2⁄3 cup yogurt (natural)
- 2 egg whites
- orange rind (extra to decorate)
directions
- Finely grate the rind from half of one orange using a fine grater.
- Cut all the oranges in haf and squeeze out the juice.
- Put all the oranges in half and squeeze out the juice.
- Put the drained apricots and all but 3 tablespoons of the orange juice, and the orange rind into a liquidizer or food processor, and puree until smooth and then pour into a large bowl and set aside.
- Put the 3 tablespoons or orange juice into a small pan and heat gently, but do not boil.
- Sprinkle the gelatin over the warm orange juice, and allow to stand until dissolved and clear.
- Stir the gelatin mixture into the apricot puree, along with the natural yogurt, mixing well to blend evenly and put in a refrigerator for about 30 minutes until almost set.
- Whisk the egg whites until they form soft peaks.
- Fold the whisked egg whites lightly, but thoroughly, into the partially set apricot mixture.
- Divide the fruit mousse evenly into serving glasses and chill until completely set.

Definitely a different kind of mousse for me to make, but we certainly did enjoy its great flavor combo! My other half insisted on a small amount of fudge topping, but I liked it just the way it was, & that comes from a dedicated chocoholic! Thanks for this wonderful dessert recipe! With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
