Open Face Tomato Basil Sandwiches

ingredients
- 1 1⁄2 cups fresh basil leaves, packed
- 1 1⁄2 tablespoons parmesan cheese, grated
- 1 1⁄2 tablespoons olive oil
- 1 garlic clove, minced (about 1 tsp)
- 3 tablespoons nonfat plain Greek yogurt
- 4 English muffins, split
- 1 large tomatoes, ripe and thinly sliced
- salt, to taste
- pepper, to taste
directions
- Blend basil, parmesan cheese, olive oil and garlic in food processor or blender until well combined. Add yogurt, and process until smooth. Season with salt and pepper.
- Preheat broiler. Place muffins on baking sheet. Broil 1 to 2 minutes, or until lightly toasted. Spread each half with basil mixture, and top with some tomato slices. Broil 1 to 2 minutes or until heated through.

Simply delicious, and healthy-perfect for us! I made this based on Chef#284180's recommendation for the Top Favorites of 2008 Game and am glad I made. I suppose if you wanted to "dude" it up, you could add feta to the basil mixture or top the tomato slice with parmesan or some other cheese, but not necessary for us. Served this for lunch to son and family and enjoyed it just as it is. Thanks Enjolinfam for sharing!

Alas, I believe today was my last basil harvest of the season (cool weather has nipped my plant already!)--and this recipe was as fine a use as I can think of for the occasion! What a pleasant lunch; it reminded me of bruschetta but had the feel of a sandwich. This is especially true as I used wheat bread instead of english muffins. DH suggested that we sprinkle the tops with parmesan before the second broiling, and he was right on the money with that one. I had reservations about the tanginess of the yogurt, but it blended beautifully. I probably used double the amount of garlic called for, but that was just out of personal preference. Update: We've moved back to the states, and are experiencing the joys of living in Wenatchee, WA for the first time! I'm spending most of my time in the kitchen canning, freezing, and drying fruit now and loving it!
We are a couple, Jason and Mollie, that loves to cook together. We have two wonderful DD's, Enjoli (9) and Emily (7) that make life so much more fun! I, Mollie, studied Nutrition so I try to make most of our meals healthy while still tasting great! Our girls love helping us cook...and eat! We're vegetarian and love eating healthy without missing any flavor! We try to eat mostly vegan, so we have many vegan recipes posted. We are world traveling missionaries and students that have visited many countries and have lived in the States, South Korea, and are currently in the Philippines. So we always need to adjust our menu based on the food available. Zaar has been a tremendous help!
