One-Bowl Pumpkin Bread

"This good bread can be made entirely in one bowl, except for the eggs, which should be cracked into a bowl, separately, just in case there could be any shells. The recipe makes two 9x5 inch loaf pans, or one could be done, and several miniatures. Enjoy."

  • Mix together the dry ingredients and spices.
  • Add the eggs, oil and water.
  • Stir in the walnuts (or pecans) and raisins. Add vanilla, if using.
  • Put into two greased and floured 9x5 inch loaf pans and bake in a preheated 350 degree oven for 1 hour, checking after 50 or 55 minutes.
