- 2 cups frozen okra, chopped
- 1 tablespoon olive oil
- 1 teaspoon cumin seed
- 1 onion, chopped
- 1 tomatoes, diced
- 1 teaspoon curry powder
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon chili powder
directions
- Microwave the okra for about 4 minutes.
- Heat the olive oil over medium heat in a sauce pan. Add cumin seeds. Stir till they swell which is about 2 minutes. Add onion. Stir and cook for about 3 minutes. Add tomato and cook for another 3 minutes. Add the rest and cook for about 3 more minutes.

<p>I became a vegetarian (again) in October 2008. I like to experiment and tend to use recipes as a suggestion.
