Norwegian Cucumber Salad (Agurksalat)

ingredients
- 1 seedless European cucumber
- 1 tablespoon parsley

DRESSING
- 2⁄3 cup white vinegar
- 2⁄3 cup cold water
- 3 1⁄2 tablespoons granulated sugar
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
directions
- Slice the cucumber thin with a sharp knife.
- Mix the dressing ingredients well and pour over cucumber slices in serving bowl.
- Refrigerate for at least an hour.
- Sprinkle with the parsley and serve.

Thanks for posting this - my Norsk-American family has made this for years and whenever I ask for a recipe, they say they just add things until it is "just so." I've never seen an "english" cuke in the salad - we use whatever's in the garden. My family also uses dill instead of parsley in the recipe, so I made that change, and often we use mild onions sliced long and thin.
