New Zealand Kumara Bake

ingredients
- 4 medium sweet potatoes, cooked, peeled and sliced in halves lengthwise
- salt
- 1 tablespoon cornstarch
- 1⁄2 cup brown sugar
- 1 cup orange juice
- 2 tablespoons chopped walnuts
- 1⁄2 teaspoon grated orange rind
- 3 tablespoons cooking sherry
- 1⁄4 cup margarine
directions
- Arrange potatoes in shallow baking pan or dish; sprinkle lightly with salt.
- Combine cornstarch, brown sugar and 1/4 t salt.
- Blend in orange juice and raisins.
- Bring mixture quickly to a boil, stirring.
- Add remaining ingredients and pour over potatoes.
- Bake, uncovered, in oven preheated to 350*F 20 minutes or until potatoes are well glazed.
- Garnish with orange slices, if desired.
- NOTE: 1-pound 2-ounce can drained sweet pototes may be substituted for cooked potatoes.

Little did I know that I've been making Australian food--when I make this using my Aunt Donna's recipe....but hey, I'm feeling pretty cool now about it! I added a bit more cornstarch than what's called for, because I don't like 'em running around the plate! Otherwise, kept it pretty much "as written." Oh, and I only made a very small batch, as I'm the only one who cares for sweet 'taters like this! *ZWT 5 Groovy GastroGnomes gallivanting the globe*
