Navy Bean Pie (Muslim)

ingredients
- 1 unbaked 9-inch pie shell
- 2 eggs, lightly beaten
- 1 cup evaporated milk
- 2 cups cooked and mashed navy beans
- 3⁄4 cup sugar
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ginger
- 1⁄2 teaspoon clove
- whipped cream (optional)
directions
- Preheat oven to 425 degrees.
- Combine eggs and evaporated milk in a bowl.
- Add beans, sugar and all spices.
- Beat at low speed of a mixer until well blended.
- Pour into unbaked pie shell.
- Bake at 425 degrees for 15 minutes.
- Reduce heat to 350 degrees and bake for another 35 minutes or until knife inserted in center comes out clean.
- Serve warm with whipped cream or you can even enjoy it cold. :-).

I made this with chickpeas that i cooked in the slow cooker and I made it vegan. Coconut milk and egg replacer were substituted for dairy. I also used turbinado sugar instead of white. I thought it was good and my family like it. It did not taste like the bean pies i get on the corner from my Muslim brothers in Philly and RICHMOND but I’ll keep trying.

I became addicted to the bean pies from Kareem's Muslim bakery in Detroit. I have made them for many of my catering events and fund raisers. People are usually skeptical, but can't get enough once they have tasted them. A shortcut I use is the unflavored, cooked navy/northern beans you can buy in jars. Also, I have used pinto, northern, lima and butter beans. Each has its own distinct taste and color! As to the spices, they can be added, changed according to personal taste without affecting the pie. A tad of vanilla maybe added if so desired.

I use dry beans, cooked overnight I can my own stuff and I don't like how much salt is in canned beans. Then I use the blender and puree the ingredients. I use pumpkin pie spice 3 teaspoons does it. Since moving from Los Angeles we miss bean pie. Can't wait to bring to church twice! Once you have bean pie well pumpkin pie and sweet potato pie pale on comparison! My beloved wife thought I was loony the first time I bought one now she begs me to make them. In my oven 350 for 45 minutes after the 15 maybe cause its more liquid. Comes out delish!

Wow, was this *good*! Used the better part of two 15-oz. cans of Great Northern Beans. Hadn't quite enough white sugar, so supplemented withbrown sugar -- maybe not quite the 3/4 cup, but it was plenty sweet. A deeper, darker flavor than pumpkin/squash pies. Since a neighbor makes brownies that include black beans as an ingredient, I knew this would be good; how right I was!

Made a bean pie for the first time,it came out so good! It's similar to the sweet potato pie except you add cloves and I use sugar cane instead of refined sugar and unsalted butter and condensed milk not the pet milk/evaporated milk.This way only 4 tablespoons of sugar is needed. Cooking with Love is all it takes... Shalom and Assalamualaikum !

I love all kinds of crafts also. In my spare time if I'm not in the kitchen; I crochet, make jewelry, bead, knit, sew, cross stitch, do plastic canvas and quilt. I have a short attention span, so I have plenty of different craft choices when I get bored of doing something. I'm mostly interested in cook books featuring regular old home cooking and favorites. When I moved to the UK I had to get rid of my cookbook collection. I did keep all my Bermudian cookbooks, charity cookbooks and 'The Foods of Israel Today' and Better Homes and Gardens 'Hometown Favorites'.

I am most passionate when it comes to my family and caring for them. Getting to feed them is an added bonus! Lucky for me, my boys are steadily growing pigs with bottomless pits for stomachs! lol :-)
