  • preheat oven to 350 degrees; spray muffin tin with cooking spray.
  • in a bowl, combine 3 eggs, 3 egg whites, milk, salt, pepper, cheese of choice and chopped veggies of choice; whisk well.
  • scoop 1/4 cup of mixture into each muffin slot until all 12 are filled; bake for 25 minutes.
  • let cool a couple minutes and serve.
