ingredients
- 6 large eggs
- 1⁄2 cup milk
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄8 cup grated parmesan cheese (if a bulkier shredded cheese like cheddar, 1/2 cup)
- 1⁄2 cup chopped onion (optional)
- 1⁄2 cup copped cremini mushroom (optional)
- 1⁄2 cup cooked drained spinach (optional)
directions
- preheat oven to 350 degrees; spray muffin tin with cooking spray.
- in a bowl, combine 3 eggs, 3 egg whites, milk, salt, pepper, cheese of choice and chopped veggies of choice; whisk well.
- scoop 1/4 cup of mixture into each muffin slot until all 12 are filled; bake for 25 minutes.
- let cool a couple minutes and serve.
