Mushrooms on Toast

- 1 tablespoon extra virgin olive oil
- 2 shallots, finely diced
- 1 garlic clove, finely chopped
- 6 ounces button mushrooms
- 1⁄4 cup white wine
- 1 sprig thyme, plus more (to garnish)
- 2 thick slices whole wheat or 2 country bread
- butter
- salt and pepper
directions
- Gently cook the shallots in the olive oil 2 minutes; add the garlic and cook a minute more.
- Add the mushrooms and toss them to coat. Add the wine, thyme and salt and cook until mushrooms are cooked through.
- Toast the bread on both sides; spread with butter. Season the mushrooms with pepper and more salt if needed. Pile them on the toast thickly. Top with fresh thyme if using.
- NOTE: You can add a spoonful of mascarpone cheese to the toast with the butter if you're feeling indulgent.
