Mozzarella Chicken Bake

"I made this tonight, and it was so delicious. I finished it off in the oven just to make sure it was baked through. I served it with spaghetti and marinara sauce, salad and hard rolls. EVERYONE loved it, how often can you say that? AND it was quick. This one is a keeper."

  • Place chicken pieces in between wax paper and pound until thin, being careful not to tear chicken. Coat with flour. Heat butter in skillet; add chicken and cook until tender, about 5 minutes per side. Place chicken on broiler pan; sprinkle with salt and pepper. Quickly saute mushrooms in skillet; arrange slices on chicken. Top each breast with slice of cheese. Place under broiler just long enough to melt cheese. Makes 4 servings.

  1. I made this with turkey cutlets, instead of pounding the chicken. I thought it was very tasty, my family thought so too. The cutlets were a little thicker than expected .So I browned them first in a skillet then poured a little speggetti sauce into a dish and then placed the cutlets on top, then baked it covered for 8 minutes.Then I took off the cover added the mushrooms and cheese and baked until the cheese was melted.I served it with speggeti with the rest of the speggeti sauce.Very tasty, thanks for the recipe.
