- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1⁄2 teaspoon smoked paprika
- 1⁄4 teaspoon black pepper
- 1⁄2 teaspoon cinnamon
- 1 yellow onion, chopped
- 2 garlic cloves, chopped
- 1 large sweet potato, chopped
- 1 (15 ounce) can chickpeas
- 1⁄2 lb cooked lamb
- 1 lemon, zest of
- 1⁄8 teaspoon sumac
- 2 cups chicken broth
- 6 kalamata olives
- 4 dried apricots, chopped
- 1⁄8 cup chopped cilantro
- 1⁄8 cup chopped parsley
- 1⁄2 lemon, sliced
- 3 tablespoons tomato paste
- olive oil, to coat pan
directions
- heat cast iron pan and add olive oil and sauté onion until soft.
- add garlic, stir, cook 1 minute.
- add all dried spices and tomato paste, cook stirring constantly 1 minute.
- add chicken broth.
- add sweet potatoes, chickpeas, lamb.
- add lemons and zest.
- add half the cilantro and parsley.
- add olives and apricots.
- cover and simmer until potatoes are softened.
- add remaining parsley and cilantro.
- serve with couscous or rice.
