  • heat cast iron pan and add olive oil and sauté onion until soft.
  • add garlic, stir, cook 1 minute.
  • add all dried spices and tomato paste, cook stirring constantly 1 minute.
  • add chicken broth.
  • add sweet potatoes, chickpeas, lamb.
  • add lemons and zest.
  • add half the cilantro and parsley.
  • add olives and apricots.
  • cover and simmer until potatoes are softened.
  • add remaining parsley and cilantro.
  • serve with couscous or rice.
