  • Open tofu package. Drain and dry tofu.
  • Put tofu in large bowl and dice into cubes.
  • Add mayo, mustard, relish and onion and gently stir, spread on bread and eat.
  • Variations: Try making it half yogurt in the mayo for less calories. Add real boiled eggs and double your protein. Try sweet hot mustard for a little kick. For extra crunch, add diced bits of celery and apple. Have fun, try to experiment a little.
  • Note: Servings are just a guess.
