Miso Soup

- 3 inches wakame seaweed, strip
- 1 tablespoon miso
- 1 handful watercress, finely chopped
- 2 leaves Chinese cabbage, finely chopped
- 2 sheets nori, seaweed cut into fine strips
- 1⁄2 teaspoon ginger, grated
directions
- Pre-soak the wakame strip in a bowl for 2 minute.
- Bring 4 cups of water to a boil in a pan and reduce the flame to a simmer.
- Add wakame strip and simmer for 3 minute.
- Put miso paste in cup and dilute it with 2 tbsp of cold water.
- Add miso mixture to pan, stir, and simmer gently for 1 minute.
- Add watercress and chinese cabbage leaves and turn off heat.
- Serve with strips of cabbage.
- Add a pinch of grated ginger.
- Enjoy!
