Mike's Macaroni Salad

- 1 1⁄4 cups macaroni
- 3⁄4 cup mayonnaise
- 2 tablespoons cider vinegar
- 1 teaspoon sugar
- 1 teaspoon kosher salt
- 1⁄4 teaspoon white pepper
- 1⁄4 cup green onion, both green and white, sliced thin
- 1 stalk celery, sliced
- 3 tablespoons shredded carrots
- 1⁄2 cup frozen peas, thawed
directions
- Put green onion, celery and carrot in mixing bowl.
- Add the salt, sugar to the bowl and mix. Allow to sit for 10 minutes. This allows for some the water to be extracted to help with the sauce.
- Add the vinegar, the pepper and the mayo. Mix well and refrigerate.
- Cook macaroni according to box, then drain and rinse well with cold water, leaving it wet.
- Fold macaroni and peas into sauce mixture, cover and chill.
