ingredients
- 1⁄4 cup butter
- 1 1⁄2 cups long-grain rice, white
- 1 medium onion, finely chopped
- 2 garlic cloves, crushed
- 1 stalk celery, finely chopped
- 3 cups chicken broth
- 1⁄4 teaspoon dried thyme
- 1 tablespoon parsley
directions
- In a 2 qt casserole dish, combine butter, rice, onions, celery and garlic.
- Microwave 5 minutes on High.
- Add chicken broth, thyme and parsley.
- Cover and cook 15 minutes stirring twice during cooking time.
- Let stand 10 minutes to finish cooking before serving.
- Serves 6.

- Use fresh herbs for best results.

I discovered this recipe while I was on a hiatus from my stove which was on the blink for a month while the expert repairmen tried unsuccessfully to repair it... (It was a BRAND NEW stove!) It is absolutely the best rice recipe and the easiest recipe I have ever made! I tweak it with additional herbs and lots and lots of garlic, and I use Country Crock Olive Oil Sticks and Better than Bouillon Roasted Garlic flavored broth because I'm vegan. I will never go back to stove top rice making again!!!! I make it before I begin my main cooking and I think it's almost better after it steams for a while while everything else cooks! I'm almost thankful my stove failed! LOL Thank you for sharing this recipe! It is a keeper!

VERY GOOD! This rice dish saved my dinner tonight! I fell behind in starting my side dish tonight and saw the microwave option and ran with it. So glad I did! I increased the garlic and used chicken stock in place of broth. I used all dried herbs and microwaved it 5 minutes more than stated and it was PERFECT! The only downside was that I overheated my microwave cooking it! ;) Great recipe! Definite repeat!

I love to cook, read recipe books and food magazines,spend time in kitchen stores, grocery stores, gourmet shops, learning new cooking techniques, trying new kitchen gadgets,tasting exotic foods,enjoying a wonderful meal. I've always had a herb garden; now I have containers on my patio with my must have herbs. It seems, everything tastes better with fresh herbs!
