Microwave Meatloaf

ingredients
- 1 1⁄2 lbs ground beef or 1 1/2 lbs ground turkey
- 8 ounces tomato sauce
- 1 egg, slightly beaten
- 1 cup quick-cooking rolled oats
- 1⁄4 cup minced onion
- 1⁄2 teaspoon minced garlic
- 1 teaspoon salt
- 1⁄4 teaspoon pepper

Sauce
- 1⁄3 cup catsup
- 1 teaspoon Worcestershire sauce
- 1 tablespoon brown sugar
- 1 tablespoon brown sugar
directions
- Combine first 8 ingredients in a bowl and mix with hands until well mixed.
- Pat into a 9 x 5 loaf pan.
- Cook in microwave on full power 6 minutes.
- While cooking for the first 6 minutes, combine sauce elements into small bowl and whisk until mixed. At the end of the first 6 minutes pour sauce over the loaf and continue cooking for an additional 5-7 minutes. (For a firmer loaf. decrease tomato sauce to 6 ounces).

Wow, I didn't think this would be as good as it was, I can't believe that it only took (in my case) 12 minutes to cook. my micro is a 900w so I cooked it for 12 minutes and it was well cooked at that. If your micro is not such a high wattage you might want to cook it longer, very nice meatloaf, the oats are a nice touch rather than bread crumbs. And I used beef but next time I will try turkey and maybe a bit of sage in it, I think that would be a nice combo. Made for PAC Fall 09

Very easy, quick meal. Tasty too! I changed it up a bit. Added to the meat mixture: 6 big cloves of garlic, minced, 1 tablespoon (approx. I don't measure) lemongrass, 1 tablespoon rosemary (I grind it fine so the flavor blends). Everything else I did the same. I havr a 1250 watt MW and it was ground chuck. I cooked it the full 13 minutes. After allowing it to rest, it was heaven on earth. I never made meatloaf in the MW before but I'm sold on it now!

I now live in Texas but I recently moved from the Pacific Northwest but I have lived all over. Spent time in Europe and mostly west of the Mississippi and the South.
