Mexican Rice and Bean Soup

ingredients
- 1 lb sausage, pork (I use "hot" Italian or another spicy sausage)
- 1 tablespoon olive oil
- 1⁄2 cup onion, chopped
- 1⁄3 cup green pepper, chopped
- 1 garlic clove, minced
- 3 cups water
- 1 (19 ounce) can tomato juice
- 1 (19 ounce) can red kidney beans
- 1⁄2 cup rice, long-grain
- 1 teaspoon paprika
- 1⁄2 teaspoon chili powder (up to 1 teaspoon, or chipotle powder)
- 1 teaspoon beef bouillon
- salt and pepper, to taste
directions
- Lightly brown sausage in olive oil, breaking up the meat. Spoon off all but 2 tablespoons of the fat.
- Add onions, green peppers and garlic, cooking until the vegetables are tender, but not brown.
- Add the water, tomato juice, beans, rice, spices and boullion.
- Simmer, covered for 30 minutes (until rice is tender), stirring occasionally.

This was delicious ~ I made a few substitutions...I used V8 instead of the water and the tomato juice, and used 1/2 t each of regular chili and chipotle chili powders. Wonderful flavors, DH loved it ~ he had 3, yes 3, bowls the first night. Leftovers are more flavorful. Thanks for sharing the recipe Sweet PQ! ~ I say it on the DIABETIC FORUM - SOUP'S ON TAG game, and just had to make it!

We along with company that came by and stayed for supper loved it! A well flavored and hearty soup that looks appealing and tastes great.Picked up some lovely fresh Italian sausage which were perfect for this soup. Didn't have enough tomato juice - added diced tomatoes to make up the difference, found it worked very well. My chipotle powder empty, which had me genereous with the chili powder. It was an all around winner at our house and has been added to my soup cookbook. Thank you Sweet PQ.
