  • In a large saucepan cook celery, onion, carrot, red pepper, parsley, green pepper, and garlic in hot oil till vegetables are tender, but not brown.
  • In a large mixing bowl combine the eggs, bread crumbs, the 3/4 cup salsa, chili powder, cumin, nutmeg, salt, and black pepper.
  • Add ground beef, ground turkey and cooked vegetables. Mix well.
  • Place in a 9 x5x3-inch loaf pan.
  • Bake in a 350 degree oven for 1 1/4 to 1 1/2 hours or till no pink remains.
  • Remove meat loaf from oven and let stand 10 minutes before serving.
  • Invert meat loaf and remove from pan. Slice to serve. Top individual servings with salsa, if desired.
