Mediterranean Wrap

"I found this recipe at the fitness magazine website under healthy sandwich recipes. I have not tried it yet, but plan to in the summer when I am able to obtain fresh ingredients out of my garden. Enjoy!"

  • Preheat the broiler. Discard the outermost slices of zucchini and brush the rest with oil; dust with salt and pepper. Place on a baking sheet and broil about 3 inches from heat for 5 minutes on each side, or until tender and slightly browned.
  • Spread 1/4 cup hummus on each wrap and sprinkle with 1 tablespoon pine nuts. Top with a few slices of tomato and zucchini, 1/2 cup spinach, a few sliced onions, and 1 tablespoon mint. Roll up and cut in half on a diagonal.

I am always trying to find fresh healthy recipes. I have fed some very picky people food that they would not normally eat. My motto is "Have I ever fed you something that does not taste good?" The response that I have gotten is "You do have a point" I love to cook and alter recipes to make them healthier.
