Mediterranean Orzo Salad

- 8 ounces orzo pasta
- 1 cup grape tomatoes
- 1 cup feta cheese, crumbled
- 1⁄3 cup chopped green onion
- 1⁄2 cup chopped seeded cucumber
- 1⁄2 cup pine nuts, toasted
- 1⁄2 cup mint leaf, finely chopped
- 2 tablespoons olive oil
- 2 tablespoons extra virgin olive oil
- 3 tablespoons fresh lemon juice
- 1⁄4 teaspoon salt (to taste)
directions
- Prepare orzo according to package directions. Drain well. Toss with a little olive oil to coat lightly. Let cool.
- When pasta has completely cooled, combine all ingredients, except tomatoes, in a large bowl and stir to coat well. Add tomatoes. Refridgerate several hours or overnight.
