- 2 lbs ground beef
- 2 cups breadcrumbs or 2 cups cracker crumbs
- 1 cup milk
- 1 egg, beaten
- 1 teaspoon Worcestershire sauce
- 2 teaspoons salt
- 1 teaspoon pepper

Sauce
- 1⁄3 cup brown sugar
- 1⁄2 cup ketchup
directions
- Grease a 12 muffin pan.
- Combine ground beef, bread or cracker crumbs, milk, egg, Worcestershire sauce, salt & pepper. Mix well.
- Pack meat mixture into 12 muffin cups.
- Bake 350°F for 40 minutes.
- Mix brown sugar and ketchup. After 20 minutes of baking, spoon 2 teaspoons on top of each muffin. Continue baking remaining 20 minutes.

What a great idea! My toddler actually ate her meat tonight, yay!!! She loved her "meat muffins" and even asked for more right before bed. That Never happens. I added 1/2 tsp Sweet Hungarian Paprika, 1/2 tsp garlic powder and 2 carrots shredded (1.5 cups maybe) which stretched the 1 lb of ground beef I made to 12 muffins. Made with cheesy rice and broccoli #307726. Bravo, busymommybee

I used a meatloaf mix made with dehydrated onions, smoked paprika, salt, pepper, and garlic powder, was outstanding!!! I also used panko bread crumbs because that is what I had.<br/><br/>I sprayed my pampered chef stoneware muffin pan with my kitchen spritzer, and they came right out, without any problems. My family loved it!!

While mixing it I thought the mixture was a little dry, but it baked up nice and moist. I used Rudy's BarBQ Sause (spelled like that)instead of the catsup, and ended up dividing it up in 6 regular and 6 jumbo muffin cups so they would be a little flatter on top and hold the sauce better. I used the foil muffin pan liners on the regular size. My husband asked the name of them, then said I should open a Meat Loaf Muffin Restaurant! Obviously, we'll be having them again. Thanks bmb!

I'm a busy mom of 3. I have a full time job- but of course my family is my passion. My husband, Jon and I will be married 6 years this November. Our children are Ian-4yrs, Sage-3yrs & Claire-2yrs. Ian will eat anything, like my husband. They both love meat. Sage is my picky eater- so I have to get creative with her. Claire will try anything- it's fun to see her reaction to new things. We eat a lot of soup and "comfort food" during the winter. And love to grill out in the summer.
Most of my time I spend with my kids, of course, they keep me busy. They love to be outside- as you can see.
If I have any free time I spend it baking, reading & scrapbooking my family memories.
